Overview

Client

Jean Christophe Lirette and Emily Adam

Two Québec entrepreneurs took a major step in the restaurant industry by acquiring the Chez Ashton restaurants, which first opened in 1969 in the Québec City area and is renowned for its must-try poutine. This great Québec classic is now handed over to two young, forward-thinking entrepreneurs. Jean-Christophe Lirette and Émily Adam had been dreaming of taking the reins of Chez Ashton for over 10 years. This new acquisition, financed by Desjardins Capital, the Fonds de solidarité FTQ and CIBC, will allow Chez Ashton to preserve its Québec roots and continue to promote similar values. In addition to bringing in a breath of fresh air to the business, the new owners have developed a growth plan for the coming years to expand and generate more profitable returns. This transaction is relevant to the field of corporate and commercial law.

Fasken advised the purchasers in their acquisition of Chez Ashton with a team led by Carl Tremblay that included Philippe Beauchamp, Frédéric St-Jean (Acquisition and Financing); Sophie Lessard Berger and Mathieu Munger-Bernier (Banking and finance); Pascal Provost and Émilie Bundock (Real estate and Environment); Frédéric Gilbert, Dave Robitaille, Vincent Belley (Franchise law); and Terry Kyle Lapierre (Employment law).
